The Perfect Lobster Roll
Is it really Summer without a lobster roll? Perfect for a casual dinner or for serving to guests. Everyone loves these! See my remoulade coleslaw recipe for a great side dish.
Serves 4.
Ingredients:
2-3 lb lobsters, steamed with the meat removed
Chopped chives
4 tablespoons mayo
1 tablespoon lemon juice
Scallions, very finely chopped
1 stalk of celery, finely chopped
Salt and pepper
Top sliced hot dog buns (try to find brioche or the best quality you can)
3 tablespoons Melted butter
In a small bowl combine mayo and lemon juice, set aside.
In a large bowl combine cut up lobster meat (leave the claw meat whole and try not to shred the other meat. You’re going for large chunks) celery, scallions and half of the chives. Mix in the mayo dressing. Add salt and pepper to taste.
Brush the inside of the hot dog buns with the butter and toast on a griddle or skillet until golden.
Add in the lobster mixture to the buns and top with some chives for color.
lobster mixture can be made a few hours ahead and refrigerated.
