Matzo Brei With Lox and Sour Cream
Not just for Passover, Matzo Brei is a fantastic breakfast or brunch dish, that looks impressive, yet takes minimal effort.
Serves 2.
Ingredients:
2 sheets of matzo
4 eggs (beaten lightly)
Lox (pastrami lox gives a nice flavor)
Chives (chopped)
Sour cream
2 tablespoons of butter
Canola or other neutral cooking oil of your choice
Salt & Pepper to taste
Break up matzo into large pieces and place in a bowl. Cover with warm water, just long enough to soften the matzo slightly (don’t let it get soggy. Drain the water.
Add beaten eggs to the broken matzo and coat evenly. Season with salt and pepper, add in some of the chopped chives and mix.
In a skillet, heat butter and a bit of oil in a pan over medium heat.
Add the matzo mixture and allow to cook, turning, so all egg cooks on the matzo.
Once cooked, portion onto plates and top with salmon and a dollop of sour cream. Garnish with chopped chives.
