Pepperonata
Pepperonata is a traditional Italian dish made with bell peppers, sweet onions, garlic and vinegar. This can be served in many different ways. Put it under some burrata, layer it onto toasted bread, mix into pasta or serve over meat. Endless possibilities with this Italian condiment.
Ingredients:
2 small sweet onions, sliced very thinly
4 small bell peppers ( I like the combo of red and yellow here)
4 cloves of garlic, very thinly sliced
1/4 cup Olive oil
3/4 teaspoon of dried thyme
1 1/2 teaspoons of red wine vinegar (you can also use balsamic here if you want a tangier flavor)
Salt
Heat the oil in a large skillet over medium heat. Add the onions and a big pinch of salt. Sauté, stirring every few minutes, until they soften. Don’t allow them to get too brown.
Add the peppers and the garlic and another pinch of salt.
Saute the peppers and garlic, stirring until softened. About 10 minutes or so.
Continue stirring, lowering the heat if needed. Then add the thyme and the vinegar.
Keep stirring for another 2 minutes or so. Taste and add more vinegar if needed.
Remove from the heat and let cool to room temperature.
This can be stored in the refrigerator.
Serve at room temperature or warmed. Enjoy!
